Ingredients
- 100 g (1 ¼ cup) oats
- 80 g (1 cup) desiccated coconut
- 150 g (1 cup) pitted dates, soaked for 10 minutes and drained
- 2 tsp vanilla extract
- 1 tbsp maple syrup
- 40 g (¼ cup) coconut oil
- 1.5 tbsp water
Method
Place all ingredients into a high-speed food processor and blitz until well combined.
Roll into balls and coat in additional coconut.

Store in an airtight container in the fridge for up to four weeks.
